Ca’dell’Ora Potato Balls

Serves 4

• 300 gr (11 oz) Ca’dell’Ora sausage
150 gr (5.3 oz) grated Grana Padano cheese 
150 gr (5.3 oz) breadcrumbs 
2 or 3 eggs 
3 potatoes (boiled and mashed) 
1 slice of bolony (about 100 gr – 3.5 oz) 
Grated peel of 1 lemon and 2 orange 
A sprinkle of nutmeg and black pepper 
• A pinch of salt
• Seed oil


After having crumbled the sausage and blended the bolony add all other ingredients with only 50 or 60 gr. of breadcrumbs and knead until you have a soft dough.

Make small balls and roll each one in the remaining breadcrumbs so that they are evenly covered.
